Madagascar origin couverture is delicate with a unique rounded mouthfeel. its flavour is characterised by fruity notes of cherries and red berries. It finishes with hints of sweet tobacco and liquorice.
Much like wine or coffee, couverture can vary in flavour depending on the "terroir" in which the cacao is grown.
We have selected a range of single origin couvertures that represent outstanding quality. The subtle flavours are attributed to agricultural factors such as the variety of cacao, climate, environment, and soil. In addition the nurturing of the harvest, drying, roasting and finally the making of couverture also contributes to the excellence of this product.
