The dark couverture has a perfect balance of roundness and length. although it has a very high cocoa content, its mildness leaves plenty of space for the fruitiness and expressive aromas. Notes of red fruit, dried grasses and hints of tropical fruit prevail in this exclusive, refined couverture.
Much like wine or coffee, couverture can vary in flavour depending on the "terroir" in which the cacao is grown.
We have selected a range of single origin couvertures that represent outstanding quality. The subtle flavours are attributed to agricultural factors such as the variety of cacao, climate, environment, and soil. In addition the nurturing of the harvest, drying, roasting and finally the making of couverture also contributes to the excellence of this product.
