Because It’s Hot Today!

By Tirta Rahmawati

AT THIS TIME OF YEAR, YOU MAY START NOTICING A FEW ADDITIONS AT XOCOLATL, YOUR MOST FAVORITE LOCAL CAFÉ. AS THE TEMPERATURE BEGINS TO INCREASE, OUR CREATIVITY ALSO BEGINS TO SPARK! THIS SUMMER WE HAVE PREPARED SOMETHING SPECIAL FOR YOU AND YOUR LOVED ONES TO TRY!

Cold Drip

It speaks for itself; cold drip is a method of brewing coffee using iced water, dripping slowly through the coffee for 7 – 8 hours using a specialized device. One of huge differences from espresso is that coffee that is being used is roasted lighter aiming for the fruity and floral notes that naturally come with coffee beans. Does it start to sound exciting? Check this out: Depending on the origin of coffee that we use throughout the week, you may expect different tasting profiles, just like wine!

Cascara Tea

Cascara, meaning 'skin' or 'peel' in Spanish, is a novel way of recycling left over coffee pulp, which is produced in huge quantities when ripe coffee cherries are pulped before the beans are washed and dried. When the cascara of the coffee cherry is dried carefully it can be steeped to produce an aromatic and lovely tea.
How we do it? We use the same method to make our cold drip coffee, only with a slightly different recipe. And just like coffee, we rotate the origin of cascara tea throughout the week so you may be tasting lychee today and then apple juice another. Well, some fancy stuff!
